Well, it looks like there are many more.

The first is called Pokemon Diamond Chinese edition. The title screen is poorly edited and Machamp's enlarged sprite is the title screen mascot for some reason. He's also green. May is seen encountering a Waratah in one of the screenshots: http://www.sogame8.com/staticpage/games/emugame/detail/CN_GBA/emu_games_CN_GBA_20091020_00023799.shtml

It seems like the starting town layout has been edited this time around too: http://www.emu999.net/gba/cngame/2009/29691.html

I also found the boxart for the game which resembles the previous Emerald hack boxart with Kadabra, but it has a strange green Golduck on it this time. It's nearly identical otherwise to the previous boxart. It's listed as Pokemon Diamond Chinese version in the auction, but the screenshots on the back show a Chinese Emerald translation and strangely no denjuu: http://item.taobao.com/item.htm?spm=1101__96.3-aUaJ5.h-588z6W&id=1029757616&

The second is called Pokemon Red Roses version and has a Milotic on the front cover (scroll down to see the screenshots on the back of the box): http://item.taobao.com/item.htm?spm=1101__96.3-aUaJ5.h-588z6W&id=1029757584&

The third has Marill and Azurill on the cover, using the exact same screenshots on the box back as the others: http://item.taobao.com/item.htm?spm=1101__96.3-aUaJ5.h-588z6W&id=1177032384&

I'm not sure how many more exist but there seem to be quite a few of these around.

EDIT: I found another one recently that features Groudon, Torchic, Kecleon and Tyrougue on the boxart. It has the same screenshots with Waratah and Punica being encountered in-game: http://item.taobao.com/item.htm?spm=11029f*x.3-iLz8.h-4josD&id=5707003291&

I bought a few of the bootlegs to check them out and have some scans: http://postimage.org/gallery/i8xxw7q/8d69ea11/

The Kadabra bootleg didn't come with any instructions, only a box.

The Golduck bootleg is the same hack with the T2 sprites and Machamp in the title screen but the overworld is edited (and looks much nicer). It didn't come with any box or instructions, but came in a white gameboy cartridge case that had the same gameboy label as the cart stuck to the front.

I found GBC versions of the Marrill and Milotic versions, but instead of being the hack of Pokemon Emerald, they're actually Chinese bootlegs of Pokemon Red/Blue. Unfortunately, they didn't come with instructions either. Though the back of the Marrill bootleg shows screenshots of the Emerald hack with the T2 sprites, the actual game on the cartridge is Pokemon Blue.

Some scans of the Marrill bootleg on the GBA: http://postimage.org/gallery/c0px1me/20c68f69/

Even though it has screenshots of the T2 hack, it's just a general hack of Ruby/Sapphire which the T2 one may possibly be related to or based off since the movesets/overworld/text were somewhat similar.

Also, the hack with Golduck has one problem that makes it impossible to continue. The boundaries for where the water pokemon should be encountered are all messed up, resulting in you encountering level 30 Wingulls and Marrills on grassy parts in the beginning of the game. Because it's hard to tell where the water boundaries end, you cannot go anywhere because you are too underleveled and get killed by them due to not being able to run from higher leveled Pokemon. It is possible to catch one of them, but it doesn't solve the problem, since water types aren't very effective against each other and end up being killed too. Also, the moves the grass starter (Mentalis) learns are Glare, Tackle, Scratch, Absorb, Stomp and Mega Drain up to about level 12.

I managed to play some more of the Golduck hack and got a lot farther into the game. Surprisingly only about 10 Pokemon (including evolutions) are replaced by Denjuu sprites. It's almost like the hack is unfinished, particularly the edits of the first few towns. Encountering high level water Pokemon is still a problem throughout, although levelling up makes it easier.
Mentalis evolves into his Mod evolution forms when he evolves, the final evolution is his Mountain evolution. His later form also learns a lot of strong attacks like thunderbolt and earthquake. Pulchella also evolves into one of Karinota's Mod evolutions.

After Slateport City, the game just plays like a normal version of Pokemon Emerald. The clock is also broken, so berries don't grow and time doesn't pass ingame.

Does the game delete the saved file?

Not that i've noticed. It saves comepletely fine. I've actually not continued anymore with it since I think i've mentioned all there is to be found in the game that's been changed.

I tried to find Pokédex or wild encounter codes for Chinese Emerald to check out the rest of the Denjuu without playing the game but failed, any idea if those exist somewhere online?
I've worked around it by importing an English save with a completed dex... looks like they barely changed anything, the total list of Denjuu replacements consists of the following:

Treecko -> Mentalis (Basic)
Grovyle -> Mentalis (Grassland)
Sceptile -> Laperouse (Natural)
Torchic -> Pulchella (Forest)
Combusken -> Callinota (Grassland)
Blaziken -> Laperouse (Desert)
Zigzagoon -> Waratah
Wurmple -> Punica
Cascoon -> Teletel
Shroomish -> Isuka (Grassland)

Yeah, that's it. I'll try to figure their names out later, it's really hard to read the characters at that size sometimes.
